Large vibrant petals giving subtle earthy aromas produce an amazingly distinctive infusion colour of rich marine blues that this botanical is well known for. The flavours are balanced earthy tones, wood notes, together with vegetal spinach umami.

A neat detail of Butterfly Pea Flowers is that the infusion colour will change when the pH balance differs, adding a citrus like lemon or lime will turn it deep purple or by adding Hibiscus it will change to a bright red tone. It can be enjoyed hot with honey or lemon, or cold, often with the addition of either honey, mint, cinnamon, passion fruit or ginger.

Butterfly Pea Flowers is a member of the Fabaceae family. Commonly found through south. East Asia. The flowers go under many names such as Blue Pea, Aprajita, Cordofan Pea, Darwins Pea Blue Tea flowers or Asian Pigeon Wings, and has been used for culinary and medicinal uses for centuries, often now being used in cocktails and rice dishes or desserts.
