Exquisitely delicate plump buds and fine curled leaves, silver downiness with yellowish, olive green and forest tones with a fresh, mellow aroma. The damp leaf has a light sweet, fruity aroma, The tea soup is a clear, pale yellow gold, the taste a beautifully sweet and warming, rounded mellow flavour with bright floral touches giving a rich, brisk mouthfeel and delicate lasting flavour full of the Jun Chiyabari character.
High quality, highly seasonal, Spring’21 harvest, individually plucking the finest leaves from a mix of cultivars, undergoing a lightly oxidised limited production following Jun Chiyabari unique techniques.
Jun Chiyabari Garden ~ The Moonlit Tea Garden was established by brothers, Bachan and Lochan Gyawali in 2000 with land acquired the following August for the planting and cultivation of tea bushes growing at between 1650-2200 metres elevation (Average 1850m) with a strong commitment to organic, biodynamic and ecological friendly practices, and respect for the plants, the environment and its people. Their practice and philosophy moving further towards ‘natural farming’ guided by the approach of Masanobu Fukuoka. With a production season from March to December, informed by Chinese production techniques using a mix of local, imperial and Darjeeling cultivars, (the latter being replaced for Chinese, Taiwanese or Japanese cultivars) producing pure high mountain teas at their factory. The garden spans 96 hectares in 6 divisions across several hills benefitting from unique microclimates and environment including mountain brooks and streams running through with wild trees, pine forest, bamboo and wildlife.
Brew Guide Per Cup:
Tea 1 teaspoon (3-4g)
Water 80ºc / 300ml
Brew time 1-2 minutes
Re-infuse leaves 2 - 3 times to personal taste.
Brew Guide ~ Gong Fu Style:
Tea 3 teaspoons (8g of tea)
Water/Temp 100ml / 80ºc
Brew time 1st a quick hot rinse of leaves, pour away, 15-30 seconds for infusions thereafter
Re-infuse leaves to personal taste, like 4 - 6 times.
