Aged Chinese White Tea

This Shoumei has been highly crafted and benefited from good storage, it is now at a great age for a very enjoyable cup. The tea soup has a delicious thick mouthfeel which is very smooth, pure and fruity with Jujube flavour similar to apple or dates.

This is a Shoumei grade the 4th grade of white teas. Consisting of two leaves picking standard. An early spring harvest, plucked from the Da Bai (Big White) cultivar with great care by the Chen Family in 2010, skilfully processed, then pressed in 2013. Traditional sun drying techniques have been used to retain the freshness of the spring leaves, due to the natural oxidisation, this results in high levels of antioxidants remaining in the leaves whilst being low in caffeine levels, similar to that of some green teas.

Part of this batch has been stored in Henan Province since 2017 then returned to Fujian and part remained stored in the original Fujian location. Because of this movement you may find that the aged taste of the tea is more pronounced from Henan to Fujian storage, both providing a good clear and sweet flavour.

Brew Guide For Gong Fu Brewing

Tea 8g

Water/Temp 100ml / 90-100ºc

Brew time 20 seconds +

Reinfuse leaves 4 - 6 times, 90ºc for the 1st 3 infusions,

100ºc or later infusions increasing brew time.

Like with many White teas the flavours within the leaves become more pronounced as the water temperature cools.

This Shou Mei also gives a great flavour brewed Western style. Alternatively its recommended from the growers that you can also try out boiling the tea with water in a kettle for 10 mins giving a creamy, very sweet flavour, ideally drunk from a large bowl.
