A Kyoto speciality, Kyobancha is a popular everyday drinking tea and is interestingly made from large mature leaves that are very coarse - often farmers will trim this type of leaf at the end of the year and put back onto the tea garden as a mulch rather than process into tea.
The large leaves are left unrolled before undergoing a very long steam and a hot roast in an iron kettle which creates a balanced smoky character. The resulting tea is one of large unrolled leaves with lightly roasted and olive tones giving a light and gentle smoked aroma. The tea soup is brilliant quality, golden in colour with a refreshing gentle flavour, a soft smokiness and smooth mouthfeel.Β
During the roasting process the leaves are subjected to high temperatures which withdraws the majority of caffeine and tannins present in the leaves.
