Monica Griesbaum is an organic tea grower and maker based at Windy Hollow Farm in Perthshire, Scotland. Windy Hollow Farm is a certified organic tea garden. Passionate about biodiversity tea growing and hand crafted single origin tea. Following a natural approach to growing inspired by the solutions provided by nature whilst encouraging the natural interconnected relationship of flora and fauna. From there, Monica produces small batch Black Teas, Green Teas, as well as experimenting with pressing tea for aging. She also known for growing quality Chamomile.
