This Spring '21 exquisite tea comprises of large young leaves and soft downy silver buds, picked as two leaves and one bud then processed with great care by the Chen Family
A pale and mild cup, floral and fruit-like notes in aroma and taste with a soft mouthfeel akin in flavour to a silver needle grade white tea. Due to the pre qing-ming material making the tea soup pleasantly thick and rich.
Traditional sun drying techniques have been used to retain the freshness of the spring leaves, due to the natural oxidisation, this results in high levels of antioxidants remaining in the leaves whilst being low in caffeine levels, similar to that of some green teas.
This tea can be kept and aged, personally we have been recommended 8 years aging, the flavours typically mellow and develop over this time.
Brew Guide Per Cup:
Tea - 1 teaspoon (3g)
Water - 80ºc // 300ml
Brew time - 2 minutes
Reinfuse leaves x 2 to personal taste
Like with many White teas the flavours within the leaves become more pronounced as the water temperature cools.
